Friday Food Guide – Sweetcorn Fritters With Avocado And Bacon



For this weeks Friday Food Guide we cook up some Sweetcorn Fritters With Avocado And Bacon – this delicious meal can be eaten for breakfast or as part of a main meal.

Shopping list:

2 large free-range egg
300g 0% fat Greek yoghurt
2 tablespoons of cornflour
120g of plain flour
400g tin sweetcorn, well drained
4 spring onions, thinly sliced
Olive oil (spray is ideal but not essential)
8 – 10 slices of smoked back bacon, cut all the fat off
1 avocado, sliced

Lets get cooking!

Grab a bowl and throw in the eggs, yoghurt, cornflour, plain flour and the pepper. Mix it together until it becomes a smooth batter. Then to finish the preparation, add the corn and spring onions and mix thoroughly.

Heat up your non-stick frying pan until it’s reasonably hot and add the olive oil. Grab a ladle, add the fritter mixture, and cook for 2-3 minutes until the bottom is crisp and golden. When it comes to turning the fritter, we found that the best way is to take the pan off the heat, place a cutting board over the top and flip it, then slip is back into the pan on the uncooked side.

The best method for cooking the bacon is with a griddle pan but a conventional frying pan will work just fine. Cook the bacon on both sides until it’s lightly browned and then add it to the cut fritters to make a ‘food stack’. Add the avocado for that extra topping.
