Friday Food Guide – Cheesy Chive and Pancetta Omelette

For this weeks Friday Food Guide we cook up the perfect brunch dish for the weekend. The cheese and pancetta makes it feel a little naughty but it really isn’t that bad! But, if you feel guilty eating cheese before lunch, you can save an extra 70 calories by leaving it out. This is a personal favourite of ours, and is great after a run!

Shopping list:

3 large free-range egg
50ml semi-skimmed milk
2 tablespoons finely snipped chives
Salt and freshly ground black pepper
3 slices of pancetta
100g Boursin Light or any other low-fat garlic cream cheese, chilled

Lets get cooking!

  • To get started preheat the grill so its very hot.

  • Grab a bowl and whisk the eggs, milk, chives, salt and pepper together.

  • Cut the Pancetta into little strips/or diced pieces into a dry frying pan (no oil) over a medium heat for 5 minutes.

  • Add the egg mixture and crumble in the cheese.

  • To get an even omelette stir around the edges of the pan and let it settle for 2 minutes.

  • Finally pop under the grill for 4 minutes until golden brown.
